One of the most interesting questions I have seen. I have significant experience with immigrant and refugee populations. I think more important that what do immigrant organizers need to know - is who do you have in the course? Do you have first or second generation immigrants who came at a young age or who were born here and have had the benefit of the US school system and the focus on computers? Do you have first generation adults who have used computers in their home countries and at what level - are they internet savvy, have they used a mouse (seriously), and other questions.
I think one should ask what the immigrant organizers want out of the learning and very importantly do they have the support of the community for the project. A database has information, lots of information, and it is important to spend some time on security so that the community will share information. The instructors need to know that many immigrant and refugee groups come from countries and conditions where collecting information is often the first step to something bad to happen and will be reluctant to cooperate. Indeed, many young organizers from the immigrant group may not fully understand this factor. Know who is in the group and perhaps use an example a bit distanced from the participants. If you have immigrants in the group from a particular country where registration of information led to genocide, you might want to use an example from another immigrant group.
