Whew just wanted to leave a short comment but can I say before I do start my comment that the process of getting a membership account just to leave an account on a Blogware blog is a bit long?
Anyway, I've always thought that the best way to teach Access database or any kind of database keeping is to not teach it as such. I think it needs to be taught as a general recordkeeping skill. The major gap I've seen is between those who start out with an Excel-like grid and those who move to normalized tables. It's a huge gap and I've often wondered if it was possible to teach people to keep records using index cards with individual fields on them and then teaching them how to use normalized tables to better organize their records. I've never tried though so I'm not sure if it would actually work.
